Produced in Amatitn, Jalisco, Mexico (Tequila Valley), Cazcanes No. 7 Blanco is crafted using 100% blue Weber agave grown at optimal maturity in volcanic, low-altitude (valle/Valle) terrain. The pias are cooked in a low-pressure autoclave over a 24-hour cycle to preserve agaves natural sweetness. Extraction is performed via a four-pass roller mill, and the juice is fermented with proprietary yeast in stainless steel vats using natural volcanic spring water trucked in from Navichi Springs. The spirit is double-distilled in stainless pots with copper coils, bottled at 40% ABV (80 proof), and is certified organic, kosher and additive-free. The brand emphasises the lost art of tequila-making, favouring traditional methods over shortcuts.
