Bridget Mac had trained and worked as an artist before making the move to winemaking, and spent several vintages working with winemakers in Europe and Australia.
The fruit for the 2024 Pétillant Naturel Riesling comes from the maritime climate of Mount Gambier, where the soil is composed primarily of limestone. The vineyard is organically managed by Mary and Guy Stratford.
The nose opens with kiwi, green papaya, and orgeat, followed by slate minerality, yoghurt, and yeast rolls. Green apple and koji flavours swirl around the palate, bringing to mind a nigori Sake.
