Until then, lovers of complex, layered and subtle Chardonnay take note!
From two plots in the estate vineyard. The first is 40 years old, contributing minerality and freshness. The other is 60 and brings depth and nuance. Both plots are managed for soil complexity with natural infusions and sprays. Native yeast fermented and aged in French oak for a year (nine months on the lees) prior to bottling.
A wine that shows power and refinement at the same time, with aromas and flavors of apricot, toast, orange peel and minerality are supported by a long, expressive finish.
Pairs well with salads, risotto, cream sauce dishes, seafood, shellfish and brie cheese!
The Winery
Saumaize-Michelin has followed organic farming for twenty years and they have been practicing biodynamic farming since 2005, which is quite unique in this part of Burgundy, where herbicide use is common. Their vines are roughly 50 years old, and the philosophy of the farming is to “capture the energy of the place”.
