This wine is a Single Vineyard Pinot Noir, an expression of single clone d5v12 hand picked. These are from 20-year-old vines grown on gravelly/volcanic terroir located in the Coal River Valley (Tea Tree).
Handpicked at optimum fruit sugar/acid balance. The d2v5 was destemmed retaining 20% whole bunches. Cold soaked for 6 days. Wild yeast, hand plunging with fermentation for 10 days.
Basket pressed to older oak barriques (220L) and allowed to undergo MLF and mature in barrel for 12 months on lees.
Minimal sulphur. No fining. No filtration. No machine touched this wine.
