This cheese was created by Lactalis (a major player in cheese-making history and one of the most influential dairy companies in the world) using the same traditional methods established by local Basque shepherds centuries ago.
Ptit Basque comes in a small cylindrical shape with a sculpted orange rind. It is a semi-hard cheese aged between 70 and 100 days. Imported from France, Ptit Basque resembles Manchego but has a milder flavor. Made with pure sheep’s milk, it is sweet and nutty with a subtle butter and caramel finish.
This cheese is ideal for use with the cheese curler (Girollle, see image), which turns the cheese into wafer-thin florets which can be held between tongue and roof of mouth for an eye-opening (taste bud opening?) flavor experience! Speaking of traditional Basque pairing tips, this cheese is often topped with dark cherry preserves and paired with a low-tannin red wine like Merlot or Gamay or Barbera!
Also recommended with bruschetta, paired with tomatoes, olives or in a gourmet ham sandwich. Delicious!
