Origen Raiz Madrecuishe is produced in Santiago Matatlan, Oaxaca by maestro mezcalero Valentin Cortes. The
Agave karwinskii
are cooked in an underground pit oven, crushed by tahona, fermented in open air wooden tanks, and double distilled in copper stills.
