Anna Valles and Jordi Ventosa, from two deeply rooted Peneds families, bring decades of Cava expertise to Mas Dahoatheir personal cellar project. They cultivate over 100 acres of east-facing vines that thrive in the morning sun, with the picturesque Montserrat mountains as a backdrop. This traditional-style Cava is crafted from Xarello, Macabeo, and Parellada. Xarello provides structure for aging, Macabeo contributes elegance and complexity, and Parellada adds citrusy freshness. After 12 months of aging on the lees, the result is a balanced, approachable wine with notes of
