One of the few mezcals that are both organic and biodynamic. The Clásico from Fidencio is made using 100% espadín agave from Santiago Matatlán, Oaxaca. Fermented using ambient yeast and distilled using an old cognac style still, here modernity would only get in the way.
Fidencio Classico Mezcal Tasting Notes
Nose: Fruity and spicy aroma.
Palate: Notes of vanilla, caramelized pineapples, honey and spice.
Finish: Smooth, citrusy finish.
