Mezcal is a distilled spirit made from fermented agave. In order to be called a Mezcal, the spirit must meet certain requirements outlined by COMERCAM, the governing body for mezcal.

Fidencio Mezcal is the result of four generations of tradition and skill. The estate-grown Espadin agave is carefully tended and maintained until it is harvested ten years later during the full moon. With a neutral heat oven, the agave is then roasted “sin humo” or “without smoke”. This unique oven helps bring out the agave’s true flavor by reducing the smokiness found in most mezcal. Crushed, fermented, and double distilled in custom alembic stills, the resulting spirit is delicate, yet flavorful.

Distillery Information
Fabrica de Amigo del Mezcal is the name of the distillery that produces Fidencio Mezcal. Fidencio Jiménez, the namesake for Fidencio Mezcal, started making mezcal over 100 years ago when he moved to Santiago Matatlán, Oaxaca. He began to live the life of a Mezcalero, learning from peers and by trial-and-error. He worked closely with his son Enrique to perfect their craft and to pass down their knowledge to the next generation.
