Don Fulano Aejo is a more serious, traditionally made aged tequila from the Fonseca family, produced at La Tequilea (NOM 1146) in the highlands of Jalisco. Its built from estate-grown blue Weber agave and aged for an extended period, often around 30 months or longer, primarily in French oak. That choice of barrel gives it a different shape than most aejos, with more spice and structure rather than overt sweetness.
The nose comes in layered and developed, with cooked agave, dried fruit, and warm oak, along with notes of vanilla and baking spice. On the palate, its full and composed, showing caramel, cocoa, and spice, but it stays balanced with a clear throughline of agave. The oak is present but controlled, adding grip and length rather than softening everything out.
This isnt a soft, easy aejo. It leans drier, more structured, and a bit more dialed-in, especially compared to sweeter, bourbon-heavy styles.
A great bottle for sipping, especially if you like aged tequila that still feels grounded in agave and doesnt lean too polished or dessert-like.
