s Distillery was founded in 2014 by Daniel Szor
with a clear goal: build a
small distillery focused on flavor, using quality ingredients, proper copper stills, and a hands-on approach to production.
Gin quickly became one of the distillerys calling cards, but it didnt happen overnight. The team worked through dozens of trial recipes before landing on the balance that defines
Cotswold
s Dry Gin today.
At its core, the gin follows the classic structure that defines great London Dry styles
juniper, coriander seed, and angelica root.
From there, the distillery
adds a thoughtful range of botanicals that bring freshness and detail.
Lavender grown in the nearby village of Snowshill
contributes a delicate floral note, while
pink grapefruit and lime peel add bright citrus lift
.
Cardamom, bay leaf, and black pepper
provide a subtle layer of spice.
Everything is
distilled in small copper pot stills using a traditional one-shot method
, meaning the gin is created in a single distillation rather than produced as a concentrate and diluted later. That
slower approach preserves the aromatic oils from the botanicals and gives the finished spirit real depth.
