The Wine
Colom Autntico is a tribute to the pioneers who planted the vineyards and opened the winery in 1831. Since then, the vineyards at Bodega Colom have been grown with sustainable farming practices to achieve the authentic expression of the terroir. Higher altitudes offer more sun and less UV protection producing a thicker-skinned grape that delivers a more robust taste with fresh acidity to support it.
This wine is intense in color and full of aromas like red cherries and blackberries, a well-integrated herbal touch with elegant spice and mineral notes. The mouth is crisp and silky with ripe and round tannins.
Pairings: leaner red meats, sirloin/hangar steak with cracked black peppercorn crust, Bison burgers for a fun twist, pork tenderloin with sage and garlic rub seared then grilled on indirect heat, pasta with fennel sausage.
