The Wine
Brisk with hints of yeast, lemon and beeswax, the aromatics here are subtle – a classic example of modern Aligot, Burgundy’s “other white grape”. Long left to toil in the chorus line, just 20 feet from stardom, this bottling provides the Aligote grape a rare chance to stand in for the star. And it does a commendable job, opening to Boffo reviews!
Look for aromas of lemon zest, green apple, and a touch of white peach and a very pleasant floral note. On the palate, the wine is mouthwateringly refreshing, driven by bright acidity and a subtle saline edge that keeps it lively and begging to be transitioned from the cocktail hour to the dinner table, where it is equally comfortable with a wide array of lighter fare. The finish features citrus highlights with just enough texture to give it presence without dominating.
Pairings: This crisp wine is ideal for seafood, mussels in white wine, goat cheese and beets, escargot.

Fans of Farmstead have likely noticed by now that we carry a number of wines from this domaine. We simply find them to stand out during our semi-annual tastings from this importer.
Borgeot is a family estate based in the southern Cte de Beaune, with holdings in Bouzeron, Santenay, and ChassagneMontrachet. Brothers Laurent and Pascal Borgeot farm sustainably and vinify with a light touch, aiming for clarity of fruit and for each wine to express the uniqueness of its vineyard. Their Aligot comes from older vines planted on limestonerich soils, giving the wine its tension and mineral snap.
