Amontillado sherries begin life as a Fino sherry but is aged for a longer period, picking up oxidative notes and richness. The wines are also just slightly sweeter than Fino or Manzanilla (<5G/L) so are still considered "dry" and are to be paired with savory foods.
Aged under flor (a cap of floating yeast) and then continues aging beyond the life of the flor. L
ike all sherries, Amontillado are fortified with neutral spirits and are a bit more alcoholic than Fino or Manzanilla (17-18% ABV)
Pair this wine with tapas featuring anything from the sea, or even at the dinner table when featuring seafood or anything savory, for that matter!
