Aged for decades in a Solera, this wine delivers heady aromas of fig, molasses, espresso and caramel. 16% ABV

Made from the grape known as Pedro Ximnez (or PX for short), whose historical origins lie along the Rhine river in Germany. The vineyards are located on the hills of the Sierra de Montilla in D.O. Montilla-Moriles (Andalusia), where the climate is continental with very long, arid summers, and relatively short and mild winters.

The region is known for its chalky soils that enhance the aromatics of the Pedro Ximenez grapes. Naturally high in sugars, the grape can be made into dry wines, but when a sherry lists this grape on the label, it’s traditionally a sweet version.

This grape’s natural sweetness is enhanced by drying the grapes on mats in the sun until almost raisined. Once pressed, the dried grapes deliver an intensely rich must. Grape alcohol is added to prevent fermentation and loss of sweetness. The final wine is aged in the criaderas and solera system which was started in 1927.

Pairings: Match this sweet, rich wine with foods of similar body and sweetness, or with salty foods for an interesting contrast. Classic pairings include salty/funky blue cheeses, aged hard cheeses like Parmigiano, Manchego or aged gouda, roasted nuts (like our Marcona Almonds) or hazelnuts, pecans or walnuts. If pairing with sweet desserts, look to bittersweet chocolates, or as a replacement for espresso in the traditional affogato.
