100% hand de-stemmed Trousseau, without any punch-down for the first two weeks of maceration. It is vinified in an open-top wooden fermenter, so as to extract less and infuse the wine more gently. Aged for one year in barrel. A delicate and light version of the sometimes ‘feral’ Trousseau. Pair with roasted chicken thighs and summer veggies.
