Commercial Description:
To make Coolship Pomme, we selected specific batches of our spontaneously fermented Coolship beerthat had fermented in oak barrels for about two yearsand added a medley of freshly picked Golden Russet, Ashmeads Kernel, Northern Spy, and Winesap apples from a local farm. We then aged that mixture for an additional four months. The result: a well-rounded and complex ale with notes of crisp apple, oak, white pepper, apricot, and a hint of funkall with a wonderfully dry finish.
